Rachel’s farm is located all the way up in Blackduck, MN, where she raises replacement heifers. Rachel is very knowledgeable about all things beef cattle, so we trust her beef recipe recommendations, too!
Freezing the berries allows the juices to release more easily and for the berries to cook down into a sauce more readily. Even if you aren’t the biggest fan of blue cheese, we recommend giving this steak with berry sauce recipe a try- the stinkiness of the cheese is offset nicely by the berries. Along with the steak, each bite is a balanced, savory, umami, delicious mouthful that will be sure to make this a regular way to serve your steaks!
Steak with Berry Sauce + Blue Cheese

2 rib steaks
2 cups red wine
1 1/2 cups sugar
1 bag frozen mixed berries
8 oz blue cheese
Directions
- Combine the wine, sugar, and berries in a saucepan. Cook over medium heat until the mixture is reduced and thick.
- As the sauce is thickening, grill your steaks to your desired doneness.
- When the steaks are done, make a thin slice on the top of each steak and sprinkle with blue cheese (as much as you like!)
- Tent them with tinfoil and allow to rest for about 5 minutes.
- Top the steaks with warm berry sauce + enjoy!
