Spaghetti, alfredo, and lasagna probably aren’t the first meals that comes to mind when you think about a portable dinner… but Brittany has found a way to make it work.
While Brittany isn’t busy with harvest herself, her husband works long hours in service to farmers. And during those busy stretches, she knows that getting a good meal to him can mean finding something that is both comforting and portable.
Enter: Splasagna. Hear it from Brittany herself:
Although my husband and I don’t farm, we both work in the agricultural industry and similar to farmers, we experience our own busy times at work. My husband sells seed, chemical, fertilizer, and offers consulting to farmers. One of his busy seasons starts in the spring when his first customer starts planting and doesn’t slow down until the bulk of his customers are done planting. Typically his days start getting longer in April and then ramp up in May, which some years trickles into June. In order for the treatment on the seeds to be the most affective at protecting that seed and ensuring successful germination rates, it is important to treat seed shortly before planting. Once my husband starts delivering seed, he’s usually going a million different directions each day going back and forth between his warehouse and his customers. It’s much easier to catch him and deliver meals to him and his business partners when they are treating seed! I usually try to do this a few times each spring so they don’t have to stop what they are doing to go find food. This recipe is great because it serves well fresh, reheated, and my husband definitely will eat it cold.
It has all the things you want from a hearty, homemade meal—without requiring everyone to sit down at the kitchen table to enjoy it. It’s a great example of the creativity that goes into feeding farm families and the people who keep farms running, especially during the busiest times of year. When someone is working long hours, a meal can be more than just fuel. It’s a little taste of home in the middle of a long day.
Brittany’s Splasagna is proof that even classic comfort food can be adapted for life on the go. Whether it’s headed to the field, the shop, or the truck cab, sometimes a portable homemade meal is exactly what someone needs to get through the rest of the day.
