The last place Sarah ever thought she would end up is back on the farm- but after leaving for college, she realized how much she missed the life she grew up in. Today, Sarah and her husband farm with her parents. Her kids also help out on the farm, where they raise corn, soybeans, beef cattle, and sheep. This farm to fork Sweet Chili Beef & Green Bean Bowl recipe is not only a way for Sarah’s family to utilize their own farm products, but also a delicious and balanced meal. It’s perfect for weeknight dinners!

Sweet Chili Beef & Green Bean Bowl

1 ½ cups jasmine rice
12 oz green beans
1 lime
¼ oz cilantro
1 ¼ lb ground beef
½ cup coconut aminos
4 TBSP sweet Thai chili sauce
Crispy fried onions
4 TBSP butter
Directions
- Cook rice according to package directions. Keep covered and off heat.
- Prepare produce- trim green beans to 2”, pick cilantro leaves and chop, quarter the lime.

- Heat a drizzle of oil in a large pan over medium high heat. Add ground beef and season with salt and pepper.

- Meanwhile, steam green beans in the microwave: add to a bowl with a splash of water, cover with plastic wrap, and microwave until tender, about 1-2 minutes. Drain any excess water.
- Add the green beans, soy glaze and chili sauce, and 2 TBSP butter to the beef. Cook, stirring, until the beef is coated.

- Remove from heat and stir in a squeeze of lime juice. Fluff rice with a fork and stir in 2 TBSP of butter. Season with salt and pepper.
- Serve beef over rice- garnish with crispy fried onions and chopped cilantro, lime wedges on the side.

Notes
- You can make your rice on the stovetop, in the InstantPot, or any other way you want!
- The “Sweet Thai Chili Sauce” can be any pre-packaged sauce you want to try- we like the one from Trader Joe’s!
