Sarah loves her InstantPot more than anyone I know. And why shouldn’t she?
When life gets busy, the last thing anyone wants is to spend hours in the kitchen. But busy doesn’t mean you have to give up the comfort of a home-cooked meal. Sarah has figured out how to use her Instant Pot to get dinner on the table in a jif, and that makes it especially handy during the long days of the farming season.
Her Meatloaf Cups with Instant Pot Mashed Potatoes take two classic comfort foods and make them work for a busy schedule. The individual meatloaf cups are easy to portion and pack, while the mashed potatoes bring that familiar, stick-to-your-ribs feeling that comes with a good homemade meal.
For farmers and farm families, convenience matters. But so does sitting down to something that’s filling and familiar.
Sarah’s approach is a great reminder that “quick” and “home-cooked” can coexist!
